I'm totally alright with the series going annual because they have separate teams. However, I do think they need to create something entirely new every other year. So new > sequel > new > sequel and so on. Change it up a little so people don't feel fatigued. If this info is true it seems many mechanics in three will be different.

Even then though, even the shittiest Souls title is better than 99.9% of anything that releases that year so keep 'em coming.

The mid-evil setting might not feel so welcomed after playing Bloodborne... Hopefully I enjoy this game more than Dark Souls 2, though.

You definitely should. I don't understand the hate some people give DS2. I think every game has had it's pros. With that said, get the scholar edition since it has huge amount of content (dlc included).

They've been playing it since day 1 lol.

They told me their waiting for me to get it so they can start a new playthrough with me.

Definitely pick it up. It has flaws, but every Souls title does, and I would go so far as to say that Scholar of the First Sin offers the best overall package that the series has to offer from a value standpoint.
