"Episodic" is just a loose term. You can say Mario Kart is effectively getting "new episodes" with the two large scale DLC packs.
I wouldn't have any problem with Star Fox being like that. Nintendo doesn't really get that caught up on the technical naming of these things.
Just call it DLC, but Nintendo definitely does do DLC ... Mario Kart 8, New Super Mario Bros. U got big DLC updates, and Smash will probably continue that.

But none of those games have a story and with Star Fox for single player mode there is somewhat of a story. It would suck not to have the whole story included in the main game.
No, first at all they will working and expermanting on new Starfox game several years before Miyamoto shows early game last E3.
Second, Nintendo is now much faster in HD development than on Wii U launch.
