In modern times, Halo. That theme is incredible.
I'm also a sucker for the original Zelda theme. It's irritating that Nintendo has basically abandoned the theme entirely. The a cappella theme in Sunshine during the secret stages was pretty fuckin' awesome, too.

I am also surprised not many people have mentioned FF6. My god, that game's song repertoire was amazing. I must have over a gig of professionally done remixes and orchestrations of the songs from that game.
