Bully (360) uses an updated 3D engine developed by Mad Doc Software. It features a higher polygon count, increased textures and dynamic lighting and a lot of added bells and whistles.
Gameplay wise it is the same PS2 game with a few extra classes in school and 2 additional chapters.
I have played and completed the game on PS2 with a 85% completion till my niece got hooked to eye toy.
Great game, not too huge or contrived, difficulty curve felt just right and for once never got threw my controller in disgust while playing a Rockstar game (GTA SA and Red Dead Revolver)

 I think I made the assumption that they did a revamped PS2 version along with the Wii and 360 one.  I hadn't heard of it before so I was kind of surprised.
