I usually play on hard so I can have a third appendage allowing me to access more buttons simultaneously.

I play on the difficulty hard enough to make the game feel like it requires skill but not overly frustrating. This tends to be the second hardest difficulty in most games.

For any new IP, usually normal. For the vast majority of FPS', veteran or hard. For games like Stalker, easy, because starting on anything else is suicide.
