The Elder Scrolls III: Morrowind

Kingdoms of Amalaur
The Witcher series (sorta)
Two Worlds series
Dragon Age (sorta)
I'd highly recommend Morrowind and Oblivion, though. Of course, they're like Skyrim but more challenging and better mods, especially for Morrowind.
EDIT: Arx Fatalis is also very, very fun with mods but it's also good without mods.
Kingdoms of Amalur: Reckoning is a great "post Skyrim" game (I understand how you're feeling. I went through the same Skyrim withdrawl myself.
).
KoA is more linear in the explorable world, but it also has a more fleshed out and satisfying combat system. I definitely recommend it. ^_^

Believe it or not Elder Scrolls Online is pretty damn fantastic. SO MUCH better than the Beta. You can actually solo the entire experience and it feels like a massive Elder Scrolls game.
Also Kingdoms of Amalur Reckoning is awesome.
Fallout 3 and NV and Dragon Age Origins
Its tough to play any previous Elder Scrolls game after playing Skyrim. Oblivion is the best in the series though

I'll recommend the obligatory Gothic 3. It's quite playable with the latest community patch.
Sadly only few people realize the greatness of Gothic with its actual huge open world, great world design and 3 completely different climate zones. Not even talking about the ton of quests, characters, atmosphere and opportunities for every class.
It's simply the best open world game concerning content and openness. If you look for a standard battle system and a shitty level system you will have to stay with the elder scrolls though.
If you demand respect or gratitude for your volunteer work, you're doing volunteering wrong.
