I voted for PS3, because it has filled so many of my gaming hours in the recent years, providing me with great content and I have come to enjoy a lot of it's exclusive tittles.
But the one I have the fondest memories of is of course the Ps1.

As great as the selection of formerly exclusives was on PS2, I wouldn't play these original versions on PS2 again, when there are enhanced versions available. So MGS2: Substance and MGS3: Subsistance instead of the original versions for me, preferably with a HD upgrade.
I love to play some classic PS1 titles once in a while, but I can't stand them on a big TV anymore... I like them much better on a PSP or Vita screen.
So the reasons to keep a PS2 or PS1 connected to the TV are fading away, when you also have a PS3. And if Crisis Core and a few other PSP titles finally get Vita compatible, I can put my PSP in retirement, too. PS3 + PS4 connected to the TV and a PS Vita "on the go", and you are set up for 99% of all playstation games.
MGS 2: Substance HD (PS3) > MGS 2: Substance HD (Vita) > MGS 2: Substance (PS2) > MGS 2: Sons of Liberty (PS2)

God of War 2 HD (PS3) > God of War 2 HD (Vita) > God of War 2 (PS2)
Devil May Cry HD Collection (PS3) > Devil May Cry 1 + 2 + 3 (PS2)
Final Fantasy X HD (PS3) > Final Fantasy X HD (Vita) > Final Fantasy X (PS2)
Ratchet & Clank Collection HD (PS3) > Ratchet & Clank 1 + 2 + 3 (PS2)
Shadow of the Colossus HD (PS3) >> Shadow of the Colossus (PS2)
ICO HD (PS3) >> ICO (PS2)
Persona 4 Golden (Vita) >> Persona 4 (PS2)
Jak & Daxter HD Collection (PS3) > Jak & Daxter 1 + 2 + 3 (PS2) > Jak & Daxter HD Collection (Vita)

I know there are like 2500+ other PS1 games, but those are just some fun ones off the top of my head. :P
If you list the "fun ones" below 90%, the PS2 and PS3 lists get much longer, too.
And there are many titles in your list which weren't PS1 exclusives.

First of all, floaty controls doesn't make it bad.
Second, Littlebigplanet deserves those scores. It's a much superior platformer to any other game this gen, including Mario, in terms of creativity and innovation.
PS1.
Suikoden 1 & 2. Final Fantasy 7, 8, 9, and Tactics. Bushido Blade. Gran Turismo 1 & 2. Soul Blade.
I can't even imagine how many hours I spent on that console.

Having level creator because you can't great levels with the floaty controls considred a great designed is cheap. The with the level creater is a joke of a platform and even comparing to mario platform wise shows how much platformers you played. Platformers is one of gerne I play the most and one think I come across unverisally is floatly controls will always be sub-par to actual good weight. One of the reasons why nobody beside die fan of the series believe it's better than mario platforming. Rayman has better platforming. Meatboy has better platforming. Donkey Kong Returns has better platforming. I'm sure all 3 people agree with your opinion.

Going by those 3 lists then PS2 is the best.
PS3 isn't bad either but has things like MLB, Journey, Killzone 2 and God of War 3 that lets it done alot.
