Anything by Joe Hisashi... the man is a legend in anime soundtrack compositions.

I'm particularly fond of his score for The Venus Wars... here's the final 8 minutes full of aural awesomeness...

Inuyasha had one of the best OSTs ever for an anime. It was different and somewhat relate-able. Kiba is pretty good too.

No, it isn't heavy metal or japanese singing although both series have those types of music.

overall Bleach's ost is a masterpiece, best all around (old and new) -- also, that's the only thing (for me) that stops one piece from being a masterpiece, it excels at everything but lacks terribly in just one aspect which holds it back from absolute greatness.
