I'm not sure your definition of defensive is the same as mine. Would you consider my Kirby defensive? I happen to play a very defensive Kirby against your Marth. I wait for an opening then punish it. I keep up walls of B-airs to mess with you to possibly mess up your approach. I shield grab at every opportunity. However, playing defensively doesn't mean strike once and then wait again. Once you've knocked them out of their rhythm you can follow up with combos.
The bolded part I disagree with. Any tournament player will tell you that the best players adapt. I don't always play defensively against every match up. Against Pits and Toon Links I can't play defensively unless I want my ass handed to me. They can outcamp me easily and eat me alive with projectiles on Dedede. I HAVE to approach them to be able to have a chance. I know this, and just because I enjoy playing defensively doesn't mean I always can.
Likewise, I'd never play a defensive Kirby against a characters like Fox. I'd have to be aggressive to grab Fox, because Fox will know grabs = pain. I also would never play a defensive Kirby against a King Dedede. Dedede has too much range and doesn't do as well when people stay on him, so I stick myself on him like a fat kid on chocolate cake (Which reminds me... I'm starving.).
There is nothing wrong with adapting. In fact, its a must. I'm fairly certain TGM would back me up on this as well if that means anything.
