Kill Bill would be cool, but WET kinda is a game adaption.

I really want an Indiana Jones game nextgen, which works like Uncharted 3, but with more fist fights and less shooting.

I don't know about movies becoming games, but the recent Transformers trilogy are video games that I would like to see become movies.

Seriously though, I'd like to see a videogame adaptation of some classic anime movies like Galaxy Express, Akira and Venus Wars. I'm sure there are some games out there only in Japan, but I think all 3 IPs would lend themselves well to a modern game.
