Mienfoo and Mienshao are weasels, not foxes. And while it is theoretically possible that Fennekin could end up being bipedal and thus potentially fighting type, I think it doesn't look remotely like it could end up with Fighting as its second type. It looks too... natural.
Anyway, I stick with my Fire/Psychic combo prediction. Fennekin looks like it could go in the psychic direction, to me.

That's probably what Fennekin is based on - a Fennec Fox, which is borderline in terms of foxes - it isn't always considered to be an actual fox.
The Grass starter is, indeed, hard to predict. My first thought was Steel due to the claws on its feet being so very steel-like, but that could just be a visual design element. Rock is for the colour, Normal for the fact that it's pretty much just a regular chipmunk in a hoodie (Normal types are generally almost ordinary animals, thus "Normal"), and then Fighting for the fact that it's bipedal.
I don't think they'll go Water/Ground again for a starter. Water/Rock is possible, but I don't see any hint of rock in the design. Pure water is more likely, but four of the five water starters so far have remained pure water, I don't think they'll stick with it for another generation. Water/Flying would make it somewhat unique as far as starters are concerned, and like I said, I see clouds around its neck. Makes me think of this (from Zelda: Wind Waker):
