For Consoles... I have to go with Nintendo. Always changing the industry with revolutionary/wacky ideas. Sony and Microsoft are also very nice manufacturers.

For games... Nintendo by far. The only Japanese producer of the 3.

I know... but japanese Sony is so relagated to mediocrity this gen - btw, imo racing sim is the worst genre there is and GT is completely the opposite of what I think japanese games are (creative, fun, wild), so I don't really consider it japanese. Sony mostly care about their western games.

True, but what about Team Ico? They create some of the most creative and unique games in the industry that are widely considered as some of the best of the best, but they are yet to release a game this gen. (The Last Guardian does look promising though): And Japan studio have been hard at work this gen.

The one and only Nintendo.
Nintendo was my first ever console and games company. I got the GBA when I was probably like 5 years old two different Pokemon games, one Mario Bros. Game, and Mario Kart. They all bring back tons of memories and I LOVED my GBA to death, then the SP came out and I loved that even more. Then my brother and I got the Nintendo GameCube for Christmas and all the games we got for it were masterpieces for out young minds. (MK DD!! is the best Mario Kart ever!)
All in all, Nintendo makes some of the best games out there, some are almost perfect. (Almost nothing can be perfect though.) Nintendo games also bring back the best memories. Nintendo is just the best. (In my opinion of course.)

While I didn't really like Ico - and still don't know how it's that cherished by most people - Shadow of The Colossus is PS2's best game. Maybe tied with some others, but on top, nonetheless.

But yeah, this gen they're simply inexistant. And even if the Last Guardian gets released, which I'm beggining to doubt, I only play PSP now (and soon Vita), so it's irrelevant to me, also.

It's a cult classic and has a meta of 91. I think Sony has poured way too much money into TLG to not release it, other studios are helping out. Japan Studio produce many PSP games so that should make them extra relevant to you :P 

In conclusion, Sony does have japanese studios that produce games xD
