I really like the Ocarina of Time soundtrack as it is. The songs in the game were made to be MIDI, and they sound a bit off when orcestrated. And changing the themes slightly would just be wrong, as there's no way they'd make them equally brilliant.
It might just be me - and possibly a fair notch of Nostalgia - but I've never heard any orchestrated version of the OoT music that's as good as the original MIDI music.
(But again, I don't think any video game music has trounced Ocarina's soundtrack for me yet),
