I doubt Microsoft can single-handedly prevent Sony from putting Skype on the PSV, but their decision would now weigh in a lot more. If anything, Sony will have to pay fees, and that's it.

They can control it, but I think it would be to a lesser degree then most people think because Skype was already on the PSP, iPhone, Android, and other electronics that compete with Microsoft products.

They can easily pull support for everything else. Heck, if they want, they can close down the entire service altogether. Just because it's been on other services doesn't mean they can't pull that support.
Now, that doesn't mean they WILL. I'm skeptical about them allowing it on the PS Vita, but that doesn't mean I'm convinced it won't happen.

Depends if contracts were made. Just because a company is bought out doesn't mean you can call contracts void. There are ways to drop contracts but they just result in lawsuit after lawsuit for the new owner.
