I got a 50 dollar gift certificate from toys r us for buying both Portal 2 and Mortal Kombat on their release day. But it is only good until 7/31, so I was wondering if there is anything interesting coming out in that time frame.

Yes there are Plenty of great games coming out before august. Rage, Brink, Duke Nukem Forever, Infamous 2, Motorstorm apocalypse, White knight Chornicals 2.
Those are just a few i can think of off the top of my head. :)
Ocarina of Time 3D on June 19th, that's the only game i can think of that i'm buying between now and then

White Knight Chronicals 2 releases on August 2nd unfortunately.

Infamous 2 will probably be amazing, you should look into that.
L.A. Noire, it will probably by overhyped and overrated like every other Rockstar published game, but I'm sure some people will find it good. I at least have a little hope for it, if Rockstar aren't developing it, then it's most likely going to be decent.
FEAR 3 looks cool, I liked all the FEAR games, if you did as well, then maybe you'd like a third.
Alice: Madness Returns: The press have been really into this game, some of the previews have been very positive and if your looking for something different, then it should be worthy consideration.
Red Faction: Armageddon: There has never been a bad Red Faction game, it will be awesome.
Shadow of the Damned: No More Heroes crossed with Resident Evil 4, your balls will be stroked.
EDF: Insect Armageddon: If you've played the previous games, you'll know what your in for.
Catherine: If your a crazy Japanophile, you"ll know what your in for. You could also play the demo.
Bet with Conegamer and AussieGecko that the PS3 will have more exclusives in 2011 than the Wii or 360... or something.
The Witcher 2!
Catherine seems to come out late July, so I'd go with that if I were you. Or if that's not weird enough for you you could go with Alice: Madness Returns.
Those are the two I'm most looking forward to in that time frame.
