To those wondering why it's exclusive, it's probably because:
1. This whole "last gen games going HD" thing is an initiative started by Sony. The only reason these games are probably getting ported at all is because Sony has been actively courting publishers to support the "Classics HD" line. The success of the God of War Collection in particular has probably been an important selling point for Sony, showing publishers there's a market for reselling older titles on ps3.
Basically, it's a ps3-centric initiative. For now. I could see one publisher making the jump to 360 with one of these collections at some point (why the hell not test the waters in the other lake), and if it does well, convincing other publishers to go multiplat as a result.
And...
2. Cramming three games on one Blu-ray is cheaper/easier than using three DVDs. Especially if, as is the case with the Mortal Kombat Kollection, they're redoing some assets for HD, thus increasing the size of the original games over and above what they were before. In the grand scheme of things, this is probably a incredibly tiny point, but added on top of #1 I think it helps to provide a reasonable explanation of why publishers aren't making these collections multiplat at this time.

Sony seems to be the ones who are pushing this whole Classics HD thing, they've even got a new box specifically made for them. I'm betting Sony talked Ubisoft and Warner Bros. into making the collections and probably pushed them along during the production, it also doesn't help that they can use the GOW collection as an example of success.
