Most of the animes that have already been stated in previous posts are a must-see. Especially Code Geass, Death Note, Macross Frontier, Gundam 00 ( alittle slow in the beginning but picks up in Season 2 ), Bleach, Naurto Shippuden ( alot better in my opinion when compared to the first season ), One Piece, Blood , s-CRY-ed, Samurai Champloo, Cowboy Bebop, and Claymore. To just name a few..

Watch Fullmetal Alchemist, One Piece, Bleach, Yu Yu Hakusho, Rurouni Kenshin, and Cowboy Bebop.  You should probably watch Kekkaishi(it's on Adult Swim) if you do not mind the fact that it starts off as been there done shonen anime.  I heard that it gets better after about 20 episodes(or in the manga's case 50 chapters)

Finish Naruto (yes I know theres a million filler episodes) and then watch Naruto Shippuden, awesome anime. I just finished watching Death Note for the first time and it was one of the best animes I watched, so many twists.

I HIGHLY recommend Code Geass, those are only 50 episodes (25 each season), and all are great, no fillers, great characters, excellent Story.

Death Note for me its a hit or miss, I don't like it, but some of my friends love it.

Full Metal Alchemist its also good and not so long.

There are others, but they are usually extremely long, so I don't recommend them,as they take forever to see (Naruto, Gintama, Bleach, One Piece, etc.) and they are usually slowed to a drag, and filled with a lot of chapters to slow the advance of the story.
