Demon's Souls isn't difficult as in "oh this isn't fair!!!" type of difficult , you just have to be careful of everything you do and not just mash buttons , it requires a little thinking ahead and some teamwork (if you want to summon people to play online)
WKC is a personal taste, a lot hated it because the battle is simillar to FFXII (it is NOT fast paced), i say it didn't deserve all the hate it got, its a very good game and the online features and community are pretty great , the storyline is something you should know about, its not deep and emotional like Final Fantasy games but its more like well... a Level-5 game its pretty colorful and mostly "Happy" storyline along the lines of Dragon Quest games
regarding LBP you can play it online with 3 people so if you want to play online (and its better with friends of course) then its a worth it, of course the content it has makes it a never ending game.

^ yeah ACIT had some hilarious cutscenes that could have passed off as clips from an animated movie.

Hmm, well for starters, I'd remove Battlefield Bad Company 2, not because I don't like it, but because for the price of it, you could pick up Uncharted and Rachet & Clank: Tools of Destruction, which, to be honest, will give you more value for your money in terms of singleplayer, although neither of these two have multiplayer.
For the "next gen" Ratchet games, you don't need to have played the older ones really, since they're part of the Ratchet and Clank Future series (Tools of Destruction, Quest for Booty, A Crack in Time), heck, you could even get Quest for Booty too since it's really cheap (It's only a 4-5 hour game anyway).
I'd agree with LittleBigPlanet, especially the GOTY edition since you get some nice DLC with it.
As for Valkyria Chronicles, it depends really, I mean, personally, I loved it, but it's a Strategy RPG, which throws some people off, just think of Advance Wars, but in 3D and you have more control over your characters.

Lbp is a great choice, you can still have fun alone.
for RPG's: wkc is great even though it got bad reviews its a jrpg they usually get bad reviews other then FF. or you can go head and get fall our 3 or oblivion.
other suggestions: uncharted 2 and infamous.
i suggest that you don't get games at full price, mainly pick games from the greateast hits.

I'd probably wait for the reviews on Modnation Racers before getting the game of the year edition. MNR is a little more interesting with a fully fledged story mode, faster results:time expense ratio in creation, and a multiplayer focus rather than multiplayer tacked.
Not that LBP isn't a game to get though. It's very good too.
Demon's Souls isn't hard but sometimes it's kinda tricky knowing what to do or where to go. I played half the game without a guide book, and frankly found it a more enjoyable experience with the guidebook. With a guide book it feels appropriately challenging, without it can feel like a little trial and error, it's a great game though but most people playing it end up on youtube walkthroughs or the wikia anyway.
Uncharted is definitely a better package than Battlefield Bad Company. Not that it's a bad game but uncharteds production values pretty much put just about any game to shame. It's definitely a must have for a PS3 owner...
If you do decide to look at a JRPG Yakuza 3 and Star Ocean the Last Hope were much better experiences for me than FFXIII or White Knight Chronicles.
One of the most overlooked, yet fantastic PS3 exclusives is Wipeout HD Fury, if you like arcade racing games this is definitely a must buy.
Uncharted 2 is the absolute best game on the system, and few would disagree with that. I've never encountered ANYBODY who doesn't love that game.
Beyond that, it's down to genre preference. My second favourite is GoW3, but if you don't like hack and slash, that won't appeal to you. Third is BioShock (the original, haven't played the sequel). And fourth is MGS4, but if you were going to get any semblance of enjoyment out of that, you'd buy it without asking.
Stick with LBP; it's fantastic. Then, I would recommend Uncharted 2, over Valkyria Chronicles (STOP BOOING! It has multiplayer, for a start, and trophies, and also 100 GoTY awards). If you want an online shooter, MW2 seems to be the jeu du jour, but many do prefer BC2. Depends on whether you want small and tactical or immense and tactical.

It's most enjoyable with other people, but there's always online. The sheer amount of content more than justifies the budget price, though.
WKC isn't worth it unless you're a huge JRPG fan.
Demon's Souls...it's a love it or hate it thing, from what I've seen.
