FF1: 3.8/5. A large open world with plenty to explore. Your magic is customizable, and forced you to make decisions.
FF2: 3.5/5. It's more of the same, except that what you did you got good at, and what you didn't do, decayed. Keeping magic up was annoying, though...
FF3: 3.9/5. A changing party member, and the beginning of job classes really made you start holding on to things!
FF4: 4.5/5. HOW many overworlds were there to play with? And all the characters... really, it's excellent!
FF5: 4.8/5. Near perfection. We fixed the job class problems from 3, and kept it a nice and challenging game.
FF6: 4.7/5. Another excellent game, it would beat FF5 if it weren't so easy compared to it.
FF7: 2.2/5. What happened? Linear dungeons, painfully easy... all it has is graphics?
FF8: 0.4/5. Hello, bottom of barrel. Everything failed here, but at least we got Triple Triad out of the deal...
FF9: 2.9/5. Better, but still too easy and too linear. Minigames felt better tied-in, too.
FF10: 1.0/5. Hello, linearity! I can take a nap now?
FF10-2: 0.8/5. Ugh, more of the characters from 10 I didn't like, with fanservice ratched up that I don't care for.
FF11: 0.5/5. MMO + FF really don't mix...
FF12: 2.5/5. Good ideas, poor execution. And I don't like losing control of my party; at least I could switch back...
FF13: 0.7/5. The linearity of 10, with new graphics and less to find! AND I can't control others in my party!
And for shits and giggles...
FFT: 2.8/5. Decent game, but horribly unbalanced. Enemy skills are off, and how does my 100% chance to hit miss??
FFMQ: 3.1/5. It bills itself as an easy RPG, and it is. However, random values are a fail...
FFL: 3.3/5. I... don't like breaking weapons. And the curve between early floors and item costs is very high. But it's also very rewarding later in.
FFL2: 3.7/5. The curve is fixed, but other problems remain.
FFL3: 4.2/5. Hey... less breaking weapons, and now even robots? Sign me up!
FFCC: 3.8/5. It rocks for multiplayer, but timing's a bitch. It also encourages you to go through boards multiple times to get more items!
FFCB: 3.0/5. Umm... FF? Where are you? It's not a bad action/adventure game, but I don't get an FF vibe.
FF4AY: 4.6/5. I thought Square forgot how to make a game this good! It's more FF4, and I can choose who I use!

Battle system didn't do it for me, the cast of characters is horrible (save for Vivi), generic story, worst villain ever in a FF, excellent soundtrack, Tetra Master is an insult to Triple Triad

Interesting battle system, story has hits and misses but it's mostly good, great cinematic experience, Blitzball is simply the best

Nice change of gameplay though in the end gets a bit repetitive, focus on political story is very welcome, some great characters

Of the ones I've played enough to rate:
I do hate rating them, however the thread calls for it so I will attach one. Most of the scores could likely be +/- .5 points (I suppose) depending on how long it's been since I've last played them.
Final Fantasy: 2/5 - Greta at the time, though almost unplayable today.
Final Fantasy II: No idea
Final Fantasy III: 1.5/5 - Virtually unplayable. Incredibly bland.
Final Fantasy IV: 5/5 - Features some of the series' best characters, most coherent in terms of theme and has some of the best music. A marvel to play in its time, and a joy to play today (DS especially)
Final Fantasy V: 2/5 - The job system, while enjoyable, grew tired part way through. Completely uninteresting characters, plot, antagonist and some average (relative to series) music.
Final Fantasy VI: 5/5 - Perhaps my second favourite in the series. It excelled in many regards and lacked in very few. A masterpiece, to be sure.
Final Fantasy VII: 4/5 - I've played this again only recently (via PSP) and I've forgotten just how good it actually is. Perhaps not the most interesting characters (though I still liked them), but it had a good plot, both a fantastic world and atmosphere, and some of the series' best music.
Final Fantasy VIII: 4/5 - I loved some of the changes they'd made with this game. It may have been quite lame in some regards (poor pacing, some brutal dialogue and some boring characters), but in others I thought it more than made up for it (music, battle system, GF, card game and world especially).
Final Fantasy IX: 4.25/5 - A joyful experience through and through. Some of the series' best pacing, music and characters. Very memorable.
Final Fantasy X: 4/5 - This one, unlike most others, has actually become less favoured as time passed. I still really enjoyed it, but an attempt just months ago to play it through with my girlfriend once again proved to be difficult. Some of that dialogue compounded with the VO is quite cringe-worthy. The plot was okay, as were its characters. However, I really enjoyed the battle system as well as the world itself.
Final Fantasy XI: 3/5 - It's a great MMO, however, my time with it was cut short after being introduced to WoW. I thought was the much superior game.
Final Fantasy XII : 4.5/5 - Just the opposite of FFX, for me it got better and better with time; and what a gem it is. Fantastic plot, amazing battle system, interesting characters, gorgeous locations and great pacing. Though I prefer the more melodic sounds of previous iterations of the series, I thought the soundtrack was well suited to the game. Overall, great experience, that I certainly didn't fully realize on my first playthrough - I very much think I didn't go in with an open mind.
Final Fantasy XIII: 4.5/5 - Though this may change, I'm really, really enjoying it so far. It certainly has it flaws, but I find it so wildly fun that it's easy to overlook those faults.
