Late 90s/early 2000s was a great time.

Quake
Unreal Tournament
System Shock
Half-Life
Deus Ex
Medal of Honor
Halo
Goldeneye
Turok

Just to name several notable franchises. Either multiplayer, single player in story based or immersive sim, or a combination of the first two, there was a lot of to love at the time.

Absolutely the best time for FPS!

Some games I would like to add to that list:
Unreal (yes, without the Tournament)
Serious Sam
Descent
Shadow Warrior
Far Cry

I started a bit earlier.

Wolfenstein 3D
Doom
Duke Nukem 3D (played tons in LAN multiplayer)
Rise of the Triad (just bonkers)
Half-Life / Half-Life Death match
Quake
Unreal / Unreal Tournament
Halo
Far Cry
Half-Life 2

I never really got into online multiplayer, too spoiled with LAN multiplayer. We always played Duke Nukem 3D, HL Death match or Quake at the end of the work day at our software company. One of us even made a HL level of the office building so we could shoot up / duke it out in the office at the end to the day. I played Unreal Tournament at home a lot with 3 PCs, Halo on split-screen.

Fast movement plus mouse look is still my favorite. By head look and free aiming (Aeon of Ruin VR, basically Doom in VR) works even better.

Even a bit earlier than that, I started with Hovertank 3D and Catacomb 3D (got both in a bundle). Both however a very simplistic, even compared to Wolfenstein 3D.

And while we're at it, I need to mention Hexen and Heretic. FPS in a medieval high fantasy setting, yay!
