I didn't have a PS1, but my best friend in school did, so I'd go to his place and play Crash, Spyro, and Croc, and he'd come to my place to play Banjo Kazooie, Mario 64, Ocarina of Time, and Lylat Wars.

I have the most nostalgia for the first game as that's the first one I played, and my cousin also had it so I played it at his place a lot when we visited, but Crash 3 Warped is probably the one that I liked best overall as it was a little less punishing and had more variety.

Out of the original trilogy Crash 2 is my favourite, I think it hits the sweet spot of not too difficult and not too easy and is more strictly platforming than the many vehicle/swimming levels in Crash 3. But they are both excellent.

The original Crash I did finish as a child, but I never got many gems, it was punishingly difficult to do that. In recent times I have fully completed the remake trilogy and completed 2/3 but to this day have still never 100%'d the original ps1 version of crash. As I've started collecting retro physical games I hope to pick up a copy of Crash 1 and actually fully complete it some day.
