It wouldn't be possible to change the ram type without effecting performance. Less RAM would be even worse and some games just wouldn't be playable.
I can't imagine the game card reader in a Switch 2 costs more than $10 so there's no real saving there, reducing the nand, not including a dock and having cheaper integrated controls is where the money saving options are.
