Faxanadu (NES)
Ultima (NES)
Quintet trilogy (SNES)
Popful Mail (SCD)
Vay (SCD). Yeah, I have this on Steam, but I would like to have it in my Switch 2 RPG collection.
The N64 Goemon games (a lot of Konami games are on Arcade Archives)
Virtua Fighter 2 and 3 (Arcade/Saturn)
Guardian Heroes (Saturn)
Princess Crown (Saturn)
Sakura Wars (Saturn) - this is an extremely long shot, as these games never got official English translations, and I doubt that Hamster is going to sink money into a venture like that, but this is a wish list, after all)
Thousand Arms (PS1)
Dead or Alive 1 and 2 (Arcade)
Tekken 3 (arcade)
Pengo (arcade)
Aside from licensing issues (I'd personally have loved to see The Simpsons and Nintendo's Popeye game come to Arcade Archives), keep in mind that Hamster pretty only does games owned by Japanese studios, as they have never had any American arcade games in AA except for Qix, which was developed in the USA but is owned by Taito and Square Enix. I have posted on their FB page suggesting to them to make a deal with Warner Bros for Midway's arcade catalogue, since WB isn't doing anything with it. I do hope that Hamster is looking at Western-produced games, but I wouldn't hold my breath right now.
