Unfortunately the full benefits of 120fps is ruined on the Switch 2 due to the poor LCD panel, it just can't switch the pixels fast enough to truly keep up.

...But if you have a decent 120fps TV/Monitor it can look and feel great.

I played Prime 4 on Switch 1, but I have tried out 120fps before on PC. 

It is noticeably smoother to me, but I worry that if I play too much at 120fps I would lose my ability to enjoy 30/60fps.

I have been gaming on 144hz for many many years now on PC... And have no dramas going back to 30fps on a console, it just depends on the -type- of game, if it's slower open world game (I.E. Skyrim, Hogwarts etc') that doesn't require twitch movement then it's fine... I am more invested in the story and art/visuals than fighting the controls.

But something like Overwatch, Call of Duty, Doom etc' I just can't play on console anymore.
