I don't have a Steam Deck, but there's a Linux app called Lutris that allows installing games from GOG and some other stores, and it has installation instructions for Steam Deck as well. The last time I checked a while back, it didn't support achievements for GOG, which is a shame, but at least games (not sure if just Linux games or Windows games as well) should be available with relative ease.
