If people don't know Ark on Switch got completely redone after the disastrous original version and is much better, and while it doesn't have a Switch 2 patch yet you can manually change the resolution and fps to take advantage of the Switch 2's power.

TLDR: You can use console commands to increase the game from 720p30 in handheld mode to 1080p60 (averaging about 50fps).

"r.SetRes 1920x1080f" - sets the game to run at 1080p, I tested this in handheld mode. The game doesn't look like it's rendering at full native 1080p with this command but it's definitely much better, and the HUD is sharp and running at 1080p.

"t.maxfps 60" changes the game to run at a 60fps cap instead, though the Switch 2 in handheld mode can't really manage it, in my early testing it was quite variable, generally around 45-55 so I used "t.maxfps 50" instead to lock the game at 50fps instead for a more consistent framerate.

"r.PostProcessAAQuality 0" turns off the Anti-Aliasing which you may or may not prefer, the game will be less blurry but much more noticeable jaggies/pixelation especially on foliage.

So if anyone feels like playing Ark on Switch 2 you can get a much better experience this way! I only tested in handheld mode so not sure what performance levels you can hit docked. Though I feel the game is CPU limited as dropping back to 720p from 1080p didn't really improve FPS.

More games need options and/or console commands like this so we can customise graphics on console. I wonder if there's any other Switch 1 titles where you can DIY a Switch 2 patch like this.
