That really depends on the game. The more demanding the game, the lower the overall framerate will be. Grounded? Absolutely! Stalker 2? Not so much lol
Unless you're running a potato of a game, it would probably be best to target 60fps at the most. Mostly for it being a better target for the device to reach, but also for battery life. But of course with it being a PC, you can tweak graphical settings to help reach your desired framerate 
Yes, Asus even offers their own first-party dock so you can hook the device up to a TV/Monitor. From what I've read up to this point, it's about as good of an experience as you can get. Aside from Windows being Windows
I only have a Steam Deck, so I can't comment from a personal perspective.
