Yeah I don't see the same logic applied when it comes to things like movie theater ticket prices.

Yup. Budgets are decided based on how big of an audience they're targeting. The ticket for any movie costs the same, a studio making a big budget movie is throwing a big budget at it because they believe there'll be a big enough audience to turn that into a profit. It makes no sense to argue that GTA and Mario Kart, two extremely popular IPs, have to be more expensive.
