I think you should still play Gears UE alongside Gears 2 and 3. No point in waiting.
I played 1 UE almost two years ago on my Series S and 2 (X360) last year on my Series X - enjoyed both a lot - planning to play Gears 3 later this year.
2 still played and looked good.
