Also, I wanted to discuss with someone, would the EU be able to keep our health public had NATO and our defence through it wasn''t there anymore? Do you think if we had to pay for defence in a Cold War like scenario would we still be able to exercise so much of our social policies like free health care?

Yes.

Public/Universal health care/hybrid systems tend to cost less and provide better quality care for the taxpayer than systems like the USA use.

Not my experience.  Good luck finding a specialist in the UK, takes 6 months.  In the US finding a specialist took a couple days.  The irony being public healthcare is so "good" the company I work for starting offering private coverage akin to the US.  Nothing like having private because public is so bad.

To be far NHS was fine for normal/simple stuff, like a head cold or flu shot.  It was terrible for anything more complex.

As someone who has experienced both systems, I would have rather have the US system.  Sure it is more "expensive" but taxes are massively lower compared to the EU...  making the US cheaper despite healthcare costs.
