You find ER easier than Demon and Souls 1?  Just curious.  I always thought Demon and Souls 1 were the easiest of the bunch, especially Demon.  Outside Maneaters, the bosses in Demon are quite easy.  At the time Flame Lurker was tough but is run of the mill compared to most everything in Souls 3.  

Demon Souls is more gimmicky and annoying than truly hard. Dark Souls is insanely hard. Both though are singinficantly harder than ER. ER is the newbie friendliest Souls for sure. The fact it allows you to be overleveled and run away from boss encounters without locking your progression makes this game much easier 

I have some characters that I doubt I have died more than 10 times in the entire game. I measure this by the number or Rune Arcs I have, I have a particularl STR character I still have over 30 Rune Arcs (I use one every time I die)

I can easily die 20 times in a single dungeon in both Demon and Dark Souls
