Because this is not the original. the original is there to be played if that's what you want. The point of this remake it to give a game with in depth exploration and use of the world FF VII give us, but with the technology thst allows us to feel more immerse in said world. 

Of course you and everybody else is allowed to no liking the sorry bits and gameplay loop of the game, but the idea of this remake was never to make the exact same gameplay and story with only different character models 

The other problem is it's entirely natural if you've spent a shit ton of money/time creating an environment/area/whatever that you want the player to really have to spend some time there and not just rip through it. 

But it's difficult/time consuming (which means money consuming) to create thrilling gameplay scenarios, multiple for each area ... so what's the alternative? 

Filler/fluff. 

Like I get why developers do it, if I was making a game and I drove my team into the ground to build a world and spent tons of money to do that, you don't want the player just shredding through it in a couple of hours total.
