Yes I agree. I am worried about the job market with AI but I do have hope that like you said it will just adjust like it always has in the past. 

Where is it written the "job market will just bounce back!" as if there's some invisible force that ensures "jobs" will always bounce back. 

There is no such thing. There is no precedent for the amount of jobs AI could render useless.
