Well, one example I enjoyed a lot was Kirby's Epic Yarn. I found the yarn-based gameplay to be quite satisfying even if its wasn't challenging because of how the yarn element was tied into the mechanics in creative ways, as well as the art style and music. I often play games to relax after work, so I really enjoyed just chilling out with Kirby in this cosy world.

yea i think a big part of it is you really enjoy the artstyle, music and characters. I'm not really a big fan of the artstyle for nintendo games. Although the music is phenomenal.

It was the gameplay too. It just felt really good to move around in and interact with its world. Challenge may be essential to you, but it's not the only way people gain enjoyment from gameplay.
