Well, one example I enjoyed a lot was Kirby's Epic Yarn. I found the yarn-based gameplay to be quite satisfying even if its wasn't challenging because of how the yarn element was tied into the mechanics in creative ways, as well as the art style and music. I often play games to relax after work, so I really enjoyed just chilling out with Kirby in this cosy world.
