No and yes.
You can still be white, even though latinos/hispanics is considered an ethnic group. Because ethnic group =/= race.
From Wikipedia about race in US Census:
"The question on Hispanic or Latino origin is separate from the question on race. No separate racial category exists for Hispanic and Latino Americans, as they do not make up a separate race."
The racial breakdown of Hispanics/Latinos in 2006 was as follows: 52.3% identified themselves as White; 41.2% "Some other race" (most of whom are presumed to be mestizos); 3.9% Two or more races; 1.4% Black.
