They're keeping it software and mainstream/casual focused, so expect Wii Music, Wii Health, and Wii Sports 2 or a spin-off like you mention are almost certain, along with a few IPs we're not aware of yet. Maybe Disaster, too.
They may wait to announce the Galaxy and Brawl release dates, but I'd expect them before the end of the conference. The Big Three may be the most anticipated, but they're also the three in least need of publicity.
