The spike protein of animal circulating SARS-CoV-2 is very conserved except for a few adaptive mutations, so I doubt any spillover could happen in the short to mid term.
People's antibody levels to the spike are just too high, so high it likely puts a damper on the emergence of any other Sarbecovirus (sars, etc.) in human populations for decades if not forever (of course, though, human lineages mutating especifically to escape conserved antibody sites will continue to exist).
