The game will still say "Special Edition" on the main menu etc. Apparently you should get a pop-up saying "thanks for buying anniversary edition" when you first boot the game after upgrading but that's basically the only indication you will get other than everything in creation club being purchased.
But as I think you said you'd bought all creation club content before that's not an indicator for you either lol.
It's possible the brand new creation club content for the Anniversary Edition isn't available to buy in the store separate from the upgrade yet, and maybe it never will be, so that could explain why it's not appearing there.
