With the supply problem on PS5 and XSX, Nintendo is going to kill it selling Switch in the next to year. But, I really hope that they are working on a eventual Switch Pro. Switch Pro wish list Faster load time and lock 1080P 60.

They can't just "lock" everything to 1080p and 60fps. The chipset in the Switch is limited and they can't just provide a "better" chip without running into possible compatibility issues and/or patching each game for the specific spec. It's not like in the PC space where games are built around scalable hardware. The only other way to do it would be to brute force it through emulation with SIGNIFICANTLY better hardware. It's just not feasible for an iterative version. 

Even the Xbox Series S if I recall has a few games that are sub-1080P. Like Yakuza which drops to 900P/60fps.

All up to the developer, the hardware is capable if they make a few sacrifices.
