Of course, the problem with this is also that we don't know the prices of those parts, but a 6c/12t 5500G should be very competitive to the i5 11400.

The problem I have with those new APUs is that: A) We don't know when they'll launch (AMD hasb't even announced them yet); B) We don't know how much they'll cost; and C) We don't even know if they'll be available at retail or if they'll be OEM only like the last bunch.

With that in mind, I feel better keeping an eye on what's already available on the market.

Well, for C, AMD already affirmed that the ZEN 3 APUs would be available at retail later this year. But I agree on the other ones.

Personally, I'm waiting for one of those APUs to build a home server. My main problem right now is to find a small B550 Motherboard that actually supports ECC memory (you can use ECC Memory on all AMD motherboards, but only a few actually support the error correction).
