I'm the same. The combat for regular encounters is only punishing if you are to careless. I would say I died perhaps 10-20 times total for regular mob, so not that problematic (but at least don't lose experience). Boss are the punishing ones because each one is very different and takes some time to learn how to better engage the combat against them. But once you do, you would probably win like 2/3 of the times you tried to fight them.

Hmmm, still seems a little unappealing to me, which is a shame as I was thinking of grabbing this on Switch due to the setting, story, atmosphere and mechanics sounding interesting. Should playing on "story" make even the bosses not a hassle?

Haven't played on story, but their description of the difficulty seems like even bosses become quite easy to deal with (it even disable one trophy). And I'm not a specialist on Souls game and was able to reasonably pass the challenges with not that many tries (and there aren't many bosses that game me real challenge, would say about 3), try and look a let's play or if you want I can give you the name of the bosses that game me a harder time so you can look the battle and see if looks so hard for you.
