Because when Sony talks about copies sold, they are actually talking about copies distributed, sold in stores and not to players.
And GoT have 1.99M after 3 days.

Wrong, it is sold through PSN plus estimative of sold through on retail (in some cases it will be very near shipped).

Sure there would be a difference between sold through and played because of logistics taking some time for end user to receive.

The site simply estimate total of users based on the trophy percentage and other methods, they can't really measure how many were sold.
