Because it's 14 years old now, there's been two new generations of systems since. The Switch is only 3 years old with some of it's biggest games not even a year old. Obviously they can't sell forever, but they can sell for a while, and for the Switch it's not even been a notable amount of time yet, Paper Mario just came out. It doesn't make sense to say they would even think of giving up new games and relying entirely on evergreens at this point when you even agree Nintendo obviously has more games for this year alone, and there's a decent amount we already know about the future.
