The constant projects might have dug GF in as HD development is more costly and time consuming than the 3DS. I don't know if simply hiring more people would be the answer as it also takes time for new hires to get integrated with GF's culture and work environment, just like any institutional job. 

Isnt the current president of Nintendo a former Pokémon Company guy?

Furukawa was an outside director of the Pokemon Company. Not sure what that means or what that entailed for him.

By the way, what happened to Genius Sonority? They are the makers of Colosseum, XD and Battle Revolution, the only studio that's made a propper Pokemon game outside of Game Freak. Why couldn't they help? What are they doing right now?

Idk about Genius Sonority. They were last working on Pokemon Shuffle in 2015 and The New Denpa Men in 2017 according to their Wiki page.

Honestly how bad would it really be if the anime and stuff started without the game having released yet? At the very least they could pledge free updates. While it's certainly true Pokemon development isn't typical, surely there's options and more that can be done to improve quality.

The MK7 team had help from Retro, BotW help from Monolith, so I think if Nintendo did a similar thing with Game Freak it should help a lot.

Idk the answer for your question in regards to the anime and stuff. That's something in relation to production and planning and Idk how that works for the anime if the games and other products are involved. Unfortunately, none of us work in these fields or truly understand how much the staff go through in developing the projects for a franchise like Pokemon. And budget and time are something to consider as well. All sounds easy right?
