What Nintendo could've done is make actual hybrid, instead of handheld masquerading as hybrid - e.g., dock might've had another Tegra X1 that runs in conjunction with portable unit when docked instead of being overpriced stand that can be easily replaced with 3rd party cable bundles.

As for TW3 port...custom art assets just for this version would go a long way to help Saber not to cut down so much on resolution and make a port with much crispier presentation (as I already mentioned, Sniper Elite 3 port looks vastly superior to Switcher 3 due to being cross gen title with mostly 7th gen tech). But doing this port the way they did was purely business decision, someone up there in CDPR obviously knew that most people would be satisfied even with this approach, so why spend more than they need.

Now how in the hell are games supposed to run well undocked with just 1 chip when they are programmed for 2?  And keep the price decent?  And keep the switching functionality simple?

They would run in portable mode same as they do now. They would run docked in higher res and settings than currently. Price would be the same, but Nintendo would have to go with what MSony do and not profit as much per console sold. Switching would probably be similar, just done in different way to cut/establish connection between portable unit and dock.
