What helped me with the bull was when I realized that I could keep him locked on and still sprint around the arena. Some suggest to keep close to him, but I just ran away most of the time until I saw an opening. Best opening is when he puts a horn in the ground to turn, you can easily get behind him for a hit or two. You can also use the firecracker prosthetic arm tool to make the bull rear back if you shoot it off close enough to him. That gives you two or three hits before he calms himself down.
