This is done because of 1 of 3 things.

1.. Minorities are gravely under represented in the majority of western works simply due to the time period they were originally created in, with segregation and rampant racism ruling the country. This is a chance to get diverse representation in those films without having to dig through for the oddball generic african/asian/hispanic sidekick to the core caucasian cast. I personally don't 100% agree with this either as some ethnically diverse myself, but I definitely understand it.

2. Sometimes the best actor wins / largest crowd pleaser wins. If a perfect fit doesn't want or audition for the role, and someone more ethnic grabs the spirit of the character in auditions, then by the same means, is it unfair to give the position to someone just because they're barely good enough, but looks like the source, vs the person who fits the role flawlessly in persona, but they're ethnic. People go through this in the daily workplace, constantly and it's wrong and unfair. One of my close friends and I had this happen between us, where he was offered a position in the same company over me, although I have a degree, he doesn't. I had higher production yields than he did. I won more performance awards than him (4 to his 1). I took on more leadership roles within our organization, he was told he couldn't move up unless he took on leadership (which he refused to do, so they forced him to be manager on duty for a single day, when I've been MOD for several months). And because we are friends and honest with one another, he felt it was BS and his promotions was bittersweet. So I would hope that some people simply do it just because it's the right thing to do and the right choice.

3. They need token ethnic guy to prevent the movie from being white-washed, and so they can get more minorities into the theater to see their movies. AKA the wrong reasons and why it causes an uproar.

If something like this is going to happen, then they should get in front of it ASAP, explain why they chose this person vs. others, show the proof (an audition tape), and have the person give testimony on why they love that character so much, and what inspired them to play that part. Do that and it takes away from the uproar, before it starts.
