I think as shown, a lot of these current and upcoming games have been in development before either third party devs had available dev kits or before third party developers realized how successful the Switch would eventually become. Games like Soul Calibur VI could potentially come to Switch due to it running on UE4, but the game was already in development prior to the Switch being a thing. Even Dragon Ball FighterZ came late, even though the time frame between the Xbone and PS4 releases compared to the Switch's release was actually not too bad in all consideration. Same with Crash N' Sane Trilogy and even Okami HD. I guess the more puzzling release was Dark Souls Remastered as it was released late on Switch for some reason..

We are too far in for those excuses. The Switch was a hit at launch and a port doesn't take a year or years to develop. I mean Blizzard said they spent 9 months developing Diablo III and I anticipate a very polished port, so that would take extra time vs a simple port job.

I suspect Dark Souls was late to avoid a poorly optimized port job like LA Noire, WWE 2Kwhatever, and Payday 2. These ports are scaled back from the more demanding 8th gen remasters. Dark Souls was handled by a another studio and very well optimized for the hardware. Meanwhile the other ports I mentioned... less impressive and less optimized.

If there were major titles in development for Switch, I imagine there would have been some announcements. I mean we have no idea when Doom Eternal is releasing, but it was at least confirmed for Switch.

It is what it is I guess. I'm not trying excuse third party developers nor Nintendo on this. Unfortunately, we don't know when or if some of these games were/are being considered for Switch.

Again, Dragon Ball FigherZ show that a relatively quick (6-9 months) port can be done. Though we also have examples like DQXI that apparently will take some time before the Switch version can release.
