I've played a lot of older games as well that I could list, but I think I'll start the list the year after I was born.

1988: Super Mario Bros. 3 (Technically, this wasn't released until 1991 in Europe, but 1988 was its original release year)
1989: Mega Man 2 
1990: Secret of Monkey Island
1991: The Legend of Zelda: A Link to the Past (Still my favourite in the series)
1992: Dune II
1993: Secret of Mana (Still one of the best co-op RPGs ever)
1994: Final Fantasy VI 

1995: Command & Conquer (Chrono Trigger a very close second)
 1996: Super Mario 64 (Crash Bandicoot and C&C: Red Alert very close too)
1997: Final Fantasy VII (Followed by Total Annihilation, Goldeneye 007, Tekken 3 and Grandia, just to name a few. This was a really good year)
1998: Baldur's Gate (Honourable mentions to Metal Gear Solid, Spyro the Dragon and Caesar III, among many others. Another huge year this one)
1999: Freespace 2 (Final Fantasy VIII, Heroes of Might and Magic III, C&C: Tiberian Sun and Pharaoh)
2000: Final Fantasy IX (The best game ever as far as I'm concerned)
2001: The Legend of Dragoon (The second best game ever)
2002: Final Fantasy X (Finally got a PS2 in the summer of 2002, and the game I got it for was FFX)
2003: Soul Calibur II (Tales of Symphonia and Beyond Good & Evil deserve to be mentioned too)
2004: Metal Gear Solid 3: Snake Eater 
2005: Kingdom Hearts II (Dragon Quest VIII a close second)
2006: Shadow of the Colossus (Okami very close second)
2007: Rogue Galaxy (Portal)
2008: Valkyria Chronicles (Crisis Core: Final Fantasy VII, Super Smash Bros. Brawl and MGS4: Guns of the Patriots get an honourable mention)
2009: Persona 4 (Assassin's Creed II, Uncharted 2 and Batman: Arkham Asylum)
2010: Enslaved: Odyssey to the West
2011: Dark Souls (Followed by Portal 2, To the Moon, Uncharted 3 and Batman: Arkham City)
2012: Journey (Borderlands 2, Spec Ops: The Line and Trine 2)
2013: The Last of Us (Ni No Kuni, Tales of Xillia, 
2014: The Legend of Heroes: Trails in the Sky (The PC port was released this year, Dark Souls II a very close second)
2015: Bloodborne
2016: Dark Souls III
2017: Horizon Zero Dawn (A lot of games still left to play from last year, but right now, Horizon is probably the best open world game I've ever played)
Probably missing a number of games for honourable mentions, but the best games of each year are all there.
